First fortnight in October; at the moment when the grapes have specific maturity characteristics.

Corte manual de la uva.

In the vineyard, bunch by bunch.

Destalking.
Surveillance:
Constant temperature monitoring and manual stirring.

Ageing

Method:
Maturing in barrels and later in the bottle.
Barrel:
French oak.
Surveillance:
Analysis, tastings, decanting (continuous monitoring).
Time in barrel:
10 months.

Sensory Analysis

Visual:
Cherry red.
Nose:
Good fruity performance, slight hints of wood, complex, with slight traces of minerals.
Tasting:
Round, buttery, tasty with a good fruity character on the tongue, and with a very subtle woody background.

Recommended dishes

Game and meat with complex sauces, etc.

Serving temperature

Degrees:
Uncork, leave for a few minutes and then serve at 17ºC.
