de Ebro, Elciego and Laguardia.
Harvest

- First fortnight in October; at the moment when the grapes have specific
maturity characteristics.

- Cutting the grapes by hand.

- During the harvest, trailer by trailer; selection bunch by bunch.

- Tempranillo 90%, Viura 6% and Garnacha 4%
- Age of vineyard:
- Between 20 and 40 years.
Production
- Method:
- Carbonic maceration.
- Temperature/Fermenting time:
- 28º C/8 days.
Sensory Analysis
- Visual:
- Medium layer cherry with violet edges.
- Nose:
- Intense aroma, spicy, very fruity, fresh, with traces of wild red berries
(strawberries), and dark fruit (blackberries and plums), with sweet and
sour hints.
- Tasting:
- Strong, meaty, very fruity, balanced with body, with a balanced acidity
and noble fruity tannin, with very special afternose notes.
Recommended dishes
- Grilled meat, game, sausage type products and salads.
Serving Temperature
- Degrees:
- Serve between 14º C and 16º C.
