Location:
Rioja Alavesa; Baños de Ebro, on the border between Rioja Alta and the River Ebro.
Size:
50 hectares of own property vineyards in the municipalities of Baños de Ebro, Elciego and Laguardia.

Harvest

Date:
First fortnight in October; at the moment when the grapes have specific maturity characteristics.
Method:
Cutting the grapes by hand.
Control:
During the harvest, trailer by trailer; selection bunch by bunch.

Vineyards

Varietals:
Tempranillo 100%
Age of vineyard:
Between 30 and 40 years old.

Production

Method:
Destalking.
Surveillance:
Constant temperature and other parameter monitoring.
Temperature/Fermenting time:
28º C/8 days.

Ageing

Method:
Maturing in barrels and later in the bottle.
Barrel:
50% French oak, 50% American oak.
Surveillance:
Analysis, tastings, decanting (continuous monitoring).
Time in barrel:
12 months.

Sensory Analysis

Visual:
Intense cherry red.
Nose:
Average intensity aroma, spicy, with hints of toasting and vanilla together with ripe berries.
Tasting:
Tasty on the tongue, with sweet traces from the ripe grapes very well blended with the barrel oak. Persistent and pleasant. Long finish.

Recommended dishes

Red meats, legumes, very cured sausage type products.

Serving temperature

Degrees:
Uncork, leave for a few minutes and then serve at 17ºC.
