Winemaking process

- Prefermentative cold maceration at 8 ºC for 5 days, followed by
alcoholic fermentation and maceration in stainless steel tank for 10
days, with daily manual cap immersions, and malolactic fermentation in
new, fine-grain, half light toast, half medium toast French oak barrels,
with weekly lees stirring. After ageing on its lees for 12 months in
new French oak barrels, the wine was clarified with egg white and manually
bottled, without filtration, in February 2007.
Characteristics

- Deep cherry red, almost opaque.
- Aromas:
- Complex and intense nose, fresh fruit, minerals, spices and creamy
toasty notes from the oak barrel.
- Palate:
- Powerful, full-bodied, oily and silky. Excellent tannin and maturity.
- Ageing potential:
- 15 years.

- 17ºC

- Game dishes, meats with complex sauces, etc.
