Vinification
Cold pre-fermentative maceration for 8 hours after destalking and crushing.
Must gravity racked after crushing and fermentation at 12ºC in stainless
steel tank. No malolactic fermentation and aged for two months in tank with
weekly lees stirring.
Characteristics
- Colour:
- Brilliant pale yellow with green hints.
- Aromas:
- Powerful, complex aroma, with hints of tropical fruit (pineapple, banana,
grapefruit), white fruit (pear) and characteristic mineral notes of the calcareous
clay soils.
- Palate:
- Medium-bodied on the palate, with good acidity, fruity freshness and along
and complex finish.
- Ageing potential:
- Two-three years.
- Serving temperature:
- 10-12ºC.
- Gastronomic recommendations:
- Fish, seafood, rice dishes.
- Presentation:
- In cardboard boxes containing 6 or 12 bottles.
